Super easy, small batch chocolate chip cookies for those times you don't need an entire fridge full of cookies! Just make enough for yourself using our Macro Mike Almond Butter Powder available in four flavours. You can also sub for our new Macro Mike Premium Almond Protein Powder if you're feeling adventurous! Enjoy


ingredients

  • 2tbsp / Macro Mike Salted Caramel Almond Butter (or Premium Almond Protein Powder)
  • 3tbsp / Nuttlex (or other vegan butter)
  • 40g / Coconut sugar
  • 25g / Granulated sweetener
  • 1tsp / Vanilla extract
  • 63g / Flour, gluten free
  • 1tbsp / Plant mylk
  • 1/4tsp / Baking powder
  • 1/4tsp / Baking soda
  • Pinch of salt
  • 50g / Dark chocolate chips

steps

Preheat the oven to 170 degrees Celcius.
 
Using an electric whisk beat the butter, sugars and vanilla for a few minutes until creamy.
 
Whisk in baking powder, baking soda and plant mylk.
 
Sift in flour and almond protein/almond butter powder and fold through with a spatula.
 
Prepare a baking tray with baking paper and using a spoon make 6 cookie balls.
 
Sprinkle a little sea salt over the top and bake for 10 - 12 minutes.
 
Let cool a little before demolishing!
 
They are even better the next day, keep these ones in a sealed container if you don't eat the whole batch at once.
