Blueberry Cinnamon

Make perfect muffins every time with these insanely delicious blueberry cinnamon (cinna-NOM!) oatmeal protein packed muffins using our Macro Mike Snickerdoodle Protein+ Powder. Looking for that extra wow factor that won't add to your waist line? Drizzle an obscene amount of Macro Mike PB Peanut Butter all over them!


ingredients

  • 100g / Coconut yoghurt
  • 120g / Apples puree, or more coconut yoghurt
  • 80g / Peanut butter
  • 100ml / Almond milk
  • 5ml / Apple cider vinegar
  • 150g / Oat flour
  • 50g / Macro Mike Hawaiian Salted Vanilla Protein+ Powder
  • 40g / Coconut sugar, or granulated sweetener
  • 2tsp / Cinnamon
  • 1tsp / Baking powder
  • 1/2tsp / Bicarb soda
  • 120g / Blueberries, fresh

steps

Preheat oven to 170 degrees and line a muffin tray with 10 muffin cups.
 
Add the coconut yoghurt, applesauce (if using), peanut butter, almond milk and apple cider vinegar to a medium bowl and stir until combined.
 
Set aside.
 
In a small bowl combine the flour, protein powder, sweetener, cinnamon, baking powder and bicarb soda.
 
Add it to the bowl of wet ingredients and fold together.
 
Add the berries, and mix through.
 
Divide the mixture between the 10 muffin cups and bake for 20-25 minutes or until golden.
 
Store in the fridge for up to a week.
 
When you're ready to eat, drizzle with your favourite Macro Mike PB Peanut Butter.
