Vegan, gluten free, and packed with protein these delicious slices with definitely satisfy your sweet tooth! Easy to make and using Macro Mike Blueberry Muffin Protein powder and your favourite ingredients like dates, oats, coconut oil, cashews, maple syrup and blue spirulina for extra blue colour. Craving chocolate? This recipe uses vegan white chocolate so get ready to be stuffed!


ingredients

BASE:

  • 6 / Dates, soaked to soften (pro tip: keep the date water to add in as necessary when blitzing up the base)
  • 1cup / Oats
  • 1tbsp / Coconut oil, melted
  • 1tbsp / Coconut flour

BLUEBERRY LAYER:

  • 1 scoop / Macro Mike Blueberry Muffin Protein+ Powder
  • 1/2 punnet / Fresh blueberries
  • 2tbsp / Coconut oil, melted
  • 1cup / Cashews, soaked to soften
  • 2tbsp / Maple syrup, softened
  • 1/3cup / Coconut, shredded
  • Salt, just a pinch to taste
  • 1tsp / Blue spirulina (optional for a deeper blue colour!)

TOPPING:

  • 200g / Vegan white chocolate

steps

In a blender or food processor, pop in dates (with pits removed), oats, coconut oil and coconut flour until smooth.
 
You may need to add in some of the date water if your blender is struggling!
 
Once smooth, pop this mix into a lined baking tray and place in the freezer.
 
Smash down blueberries with a fork so they are in smaller pieces.
 
Rinse out the blender/food processor.
 
Add in the soaked cashews, coconut oil, maple syrup, and salt.
 
Pop this mix into a bowl, then add in the protein powder, coconut and blueberries, stir with a mixing spoon.
 
Add this mix over the base and put back in the freezer.
 
Melt chocolate until smooth, then pour over the slice and set either in the fridge or freezer for 2 hours or overnight.
 
Slice into bars as big as you want and enjoy!
