ingredients

COOKIE BASE
  • 200g / Macro Mike Choc Chip Snickerdoodle Cookie Mix
  • 66ml / Almond milk
FILLING
  • 75g / Black beans
  • 120g / Apple sauce
  • 60g / Macro Mike Sweet Original PB+ Peanut Butter (creamy)
  • 25g / Cacao powder
  • 30g / Macro Mike Choc PB Protein+ Powder
  • 15g / Coconut flour
  • 25g / Natvia or stevia

steps

Preheat oven to 170 degrees Celsius (fan forced) and prepare a muffin try by lining with 8 muffin baking papers.
 
COOKIE BASE
In a small bowl, prepare cookie base by combining the cookie mix and almond milk until a stick dough forms. Divide between the paper cups and press to form a cup. Set aside.
 
FILLING
In a food processor, blend the beans, applesauce and peanut butter until smooth. Add all of the remaining ingredients and blend until everything is combined.
 
Divide batter evenly between the cups. Place in the oven to bake for 25mins.
 
Allow to cool slightly and enjoy!
 
Store in the fridge for up to 5-7 days.
