choc chip protein cookies

  • 1 / Flax egg (10g ground flax + 30ml water)
  • 120g / Applesauce
  • 60ml / Almond milk
  • 1-2tsp / Vanilla
  • 60g / Brown rice flour
  • 40g / Almond meal
  • 80g / Macro Mike Protein+ Powder (your favourite flavour!)
  • 25g / Natvia/Stevia
  • 70g / Vegan choc chips


Prepare flax egg, set aside to thicken.
Preheat oven to 150 degrees Celsius (fan forced) and line a tray with baking paper.
In a medium bowl, combine the flax egg, applesauce, almond milk and vanilla, then mix until smooth.
Add the rice flour, almond meal, protein powder and natvia, then mix until everything is combined. Fold through the chocolate chips.
Divide mixture into 9 cookies, and use your fingers/the back of a spoon to spread them out.
Bake for 25-35 minutes.
Store in an airtight container in the fridge.
Cookies will keep for 5-7 days.
