Sweet Potato Pancakes

You can hide vegetables everywhere and in anything. Have you ever tried sweet potato pancakes with chocolate chips? Time to turn your world upside down! This is a great plant based breakfast recipe full of protein to help keep you full all day, and keep those naughty cravings from creeping up on you. Try using Macro Mike Hawaiian Salted Vanilla Protein+ Powder for best results.


  • 2 / Flax eggs
  • 1/3cup / Sweet potato, cooked and pureed
  • 1tsp / Vanilla
  • 1tbsp / Almond milk, vanilla unsweetened
  • 1/3cup / Almond flour/meal
  • 2tbsp / Tapioca (arrowroot) flour
  • 2tbsp / Macro Mike Hawaiian Salted Vanilla Protein+ Powder
  • 1tsp / Cinnamon
  • 1/4tsp / Ginger, ground
  • 1tsp / Baking powder
  • 1/2tsp / Baking soda
  • A pinch of salt
  • Dark chocolate chips, measure with your heart


Place flax eggs, milk, vanilla, and sweet potato in to a food processor or blender and process until smooth, creamy and well combined.
Pour mixture in to a medium size bowl and sift in flours, protein powder, cinnamon, baking powder, baking soda and salt, then stir to combine.
Add chocolate chips, give one last stir then set aside for 5 minutes or so to settle and thicken or while you get your fry pan ready.
Cook over low heat for 2-3 minutes per side, until the top and the edges look slightly dry/set.
Carefully flip and cook for another minute or 2 until cooked through.
Transfer to a wire rack (or directly to your mouth, but careful, they're hot!!) and repeat until all of your pancake batter has been used up.
Top with toppings of choice (if you haven't eaten them straight from the fry pan/skillet) like dairy free cultured vegan butter and sugar free maple syrup!
