One bowl recipes are great for when you don't want to make a big mess in your kitchen, which is why this chocolate fudge brownie cupcake is so great! Try this plant based easy to make cupcake recipe with our Double Chocolate Fudge Brownie Mix along with a healthy helping of Macro Mike Chocolate Peanut Butter Protein Powder in the icing.


  • 2 / Flax eggs
  • 2tbsp / Coconut vanilla yoghurt
  • 2tbsp / Almond milk, unsweetened vanilla
  • 1tsp / Vanilla
  • 1 1/4cup / Macro Mike Double Chocolate Fudge Brownie Mix
  • 1tsp / Coconut flour
  • 1/4cup / Monk fruit sweetener
  • 1tsp / Instant coffee
  • Pinch of cinnamon
  • 1tsp / Baking powder
  • 1/2tsp / Baking soda
  • A pinch of salt




Preheat oven to 175'C (350'F) and line (or grease and flour) a muffin tray with paper cases.
Place all cupcake ingredients into a medium bowl and stir until well combined.
Spoon mixture into muffin tray and bake for 10-12 minutes until tops spring back when gently pressed and a toothpick has just a few crumbs attached when inserted into the center.
Allow to cool in the tray for a 2-3 minutes before transferring to a wire rack (or pop them in the freezer for 5 minutes) to cool completely.
For the frosting, place all ingredients into a small bowl then stir until smooth, creamy and well combined.
Taste and adjust to desired level of rich, nutty, chocolaty deliciousness.
Slather generously onto the cupcakes.
