Coconut Acai Peanut
Butter Cheesecake

Creamy, dreamy, coconut acai cheesecakes loaded with Macro Mike Chocolate Peanut Butter protein. Vegan cheesecake is easy to make and requires few ingredients, so no excuses not to make these little colourful bites full of acai powered anti-oxidants. Top with coconut and nuts!




  • 1cup / Coconut cream
  • 1/2cup / Cashews, soaked in hot water
  • 2tbsp / Coconut oil
  • 1tbsp / Maple syrup
  • 2tbsp / Macro Mike PB+ Peanut Butter
  • 1tbsp / Acai powder


Mix ingredients for the brownie base in a blender until a thick ‘dough’ is formed.
Press brownie mix into molds or a lined tin and put in the freezer to set.
Make the cheesecake layers by blending coconut cream, cashews, coconut oil and maple syrup in a high speed blender until completely smooth.
Seperate cheesecake mixture into two separate bowls.
In one bowl, stir through through the peanut butter and pour over brownie based.
Put back in the freezer.
In the other bowl, stir through the acai powder and pour over set PB layer.
Leave in the freezer to fully set and leave in the fridge to soften before eating.
