  • 110g / Drained chickpeas
  • 60g / Macro Mike Cookie Dough Protein+
  • 30g / Almond meal
  • 1tbs / Coconut flour
  • 1 .5tsp / Vanilla
  • 20g / Runny Macro Mike PB+ Peanut Butter (your favourite flavour)
  • 30-40g / Rice malt syrup (adjust to taste)
  • 15g / Choc chips
  • 3tbs / Vanilla unsweetened almond milk


  • 150g / Your favourite DF vanilla ice cream.


In a food processor, blend all cookie dough ingredients except for the chocolate chips. It should end up as a big doughy ball .


Fold through choc chips and hand roll the dough into 12 even sized balls.


Using a large silicone muffin mould, press dough into the bottom each muffin hole then scoop ice cream on top [approx 2tbs].


Using the back of a spoon flatten the ice cream into a smooth layer - place in the freezer for 30 minutes.


Remove from freezer and flatten left over dough balls with your hand then firmly place on top of each ice cream sandwich.


Return to the freezer for another 30 minutes.


Let sit for 5 minutes before eating out of the freezer.



HINT: Add some Macro Mike PB+ in the middle of each sandwich for extra yum!
