110g of drained chickpeas

60g of @macr0mike cookie dough protein

30g of almond meal

1tbs of coconut flour

1 .5 tsp vanilla

20g runny almond butter (or nut butter of choice )

30-40g ricemalt syrup (adjust to taste)

15g of choc chips

3tbs of vanilla unsweetened almond milk


*approx 150g of your fave DF vanilla icecream.






In a food processor blend all cookie dough ingredients except for the chocolate chips.. It should end up in a big doughy ball .

Fold through choc chips & roll the dough into 12 even sized balls.

Using a large silicone muffin mould, press dough into the bottom each muffin hole then scoop ice cream on top [approx two tbs].

Using the back of a spoon flatten the icecream into a smooth layer - place in the freezer for 30 minutes.

Remove from freezer and flatten left dough balls with your hand then firmly place on top of each icecream sandwich.

Return to the freezer for another 30 minutes +.


Let sit for 5 minutes before eating out of the freezer!
