Chocolate Fudge Blondies

Take a bite of these Marble Swirled Peanut Butter Chocolate Fudge Blondie Bites - oh yea that's what I'm talking about. Grab some of our Macro Mike Peanut Butter and go to town with this plant based recipe from one of our top vegan foodies. Bring it out for a snack or dessert, share it with friends or eat the whole batch!


ingredients

BLONDIE LAYER:

  • 1 / Flax egg
  • 1/2cup / Macro Mike Sweet Original PB+ Peanut Butter, made smooth
  • 1/4cup / Granular sweetener
  • 1tbsp / Maple syrup
  • 1tsp / Vanilla extract
  • 1tbsp / Coconut flour
  • 1tsp / Cinnamon
  • A pinch of salt
  • Chocolate, chopped (as much as you want!)

BROWNIE LAYER:

  • 1 / Flax egg
  • 1/2cup / Macro Mike Chocolate PB+ Peanut Butter, made smooth
  • 2tbsp / Maple syrup
  • 1tsp / Vanilla
  • 1/4cup / Granular sweetener
  • 3tbsp / Cacao
  • 1tsp / Coconut flour
  • 1tsp / Espresso, instant (optional)
  • A pinch of cinnamon
  • Chocolate, chopped (as much as you want!)

TOPPING:

Pre-heat oven to 175 degrees Celcius.
 
Line a small baking dish (or mini loaf pan - I use a 5 x 5 inch) with baking / parchment paper and set aside.
 
In a one bowl mix your blondie batter.
 
In another bowl, mix up your brownie batter.
 
Pour all but 1 tablespoon of brownie batter in to your prepared baking dish (reserve the last tablespoon to swirl the top).
 
Top with chopped chocolate and gently press down in to the mix.
 
Add remaining chopped chocolate to the blondie batter and stir to combine.
 
Spread blondie batter on the brownie layer.
 
Add 1 teaspoon of almond milk to remaining brownie batter and stir until smooth.
 
Randomly place spoonfuls of remaining brownie batter along with extra peanut butter over the top of the blondie batter and use a knife (or tooth pick) to swirl through the batter then sprinkle with extra chocolate.
 
Bake for 30-35 minutes, until the top is looks set and a tooth pick has just a few crumbs attached when inserted into the middle.
 
Allow to cool for 5-10 minutes (if you can!) and sprinkle with salt. Slice & devour!
