Peanut butter crunch protein magnums

Yummy! Peanut Butter Chocolate Magnum Nicecream Bars are totally vegan and full of healthy plant based protein. They're great for kids but they're great for just about anyone wink wink! You'll need your favourite flavour of Macro Mike Protein Powder, some coconut yogurt, cashews, and a few other pantry staples for this gluten free and dairy free treat.



ingredients

  • 80g / Macro Mike Protein+ Powder of choice
  • 60ml / Sugar free maple
  • 80g / Coconut yoghurt
  • 80g / Light coconut milk (cream part from a chilled can works the best)
  • 30g / Soaked natural cashews
  • 1tsp / Vanilla extract
  • Halved peanuts (optional for decoration)

CHOCOLATE DRIZZLE :

 

  • 50g / Dark choc (vegan)
  • 25g / White choc (vegan)
  • 5ml / Coconut oil
 

steps

Soak cashews for 4 hours+ in boiling water.
 

Add all ingredients to a blender and blend until smooth. Add a few tbs of mix to each magnum mould (if you don’t have these you could use silicone muffin moulds).

*Optional to add a few peanuts on top for decoration here.

*You can also add some melted chocolate to the remaining ice cream in the processor, blend it again to have a choc peanut crunch magnum!

 

Place your icy pole sticks in and put them back in the freezer to set approximately 2 hrs.

 

CHOCOLATE DRIZZLE

Melt the chocolate with coconut oil in 15 second increments.

Pop the magnums out of their moulds and coat the magnums using the back of a spoon.

Decorate to your liking then return to the freezer or eat straight away!
