PB+J WAGON WHEELS
A childhood classic! Who remembers those delicious PB&J wagon wheels in your lunchbox at school? Well now you can enjoy a healthy and delicious version right at home!
- 15g / Chia seeds (mixed with 45ml water)
- 40g / Macro Mike Original PB Protein+ Powder
- 75g / Oat flour
- 60g / Almond meal
- 30g / Natvia
- 1tsp / Baking powder
- 60g / Applesauce
- 100g / Coconut yoghurt
- 1tsp / Vanilla essence
- 60g / Macro Mike Strawberry Jam Donut Protein+ Powder
- 80ml / Water or almond milk
- 3tbsp / Strawberry jam, sugar free
- 150-200g / Vegan dark chocolate
Preheat oven to 160 degrees Celsius, prepare 2 baking trays by lining with baking paper and set aside.
Prepare the chia egg but combining the chia seeds and water in small cup and leave to thicken.
In a medium bowl, combine the protein powder, oat flour, almond meal, Natvia and baking powder.
In a separate large bowl combine the chia egg with the applesauce, coconut yoghurt and vanilla, mixing until smooth.
Add the bowl of dry ingredients to the wet and mix together until a sticky dough forms.
Cover your hands in extra oat flour, divide into 20 balls, flatten out on tray and bake for 20 minutes or until golden.
Once the biscuits are baked and are cooling, prepare the filling but combining the protein powder and water/almond milk, mixing until smooth.
Divide the mixture evenly between the 20 biscuits and spread out to form a flat layer.
Pair the biscuits together (to make 10 cookie sandwiches), add a teaspoon to one cookie in each pair and sandwich the biscuits together.
Finally, melt 20g* of chocolate in small cup in 20sec intervals in the microwave and careful cover each sandwich in chocolate using a spoon (prepared to get messy).
Repeat this process until all pf the cookie sandwiches are covered.
*NOTE: do not melt all of the chocolate at once as it will start to set again quickly and make it impossible to spread onto the biscuits.
