ingredients

For the base:

  • 1 cup oats
  • 1 cup almonds
  • 1/2 cup dates, soaked
  • 3/4 cup chickpeas, rinsed + drained

For the mousse filling:

  • 1.5 cups cashews, soaked
  • 3/4 cup dates, soaked
  • 3/4 cup chickpeas, rinsed + drained
  • 1/4 cup cacao powder
  • 6tbsp coconut cream
  • 2tbsp coconut oil, melted

For the caramel:

  • 1 cup dates, soaked
  • 1 scoop of Macro Mike protein powder
  • 1/4 cup peanut butter
  • 1/3 cup coconut cream

steps

For the base, blitz ingredients in a food processor until fine. Add a dash of water, blitz again and press into a lined baking tin. Freeze.

 

For the mousse filling, blitz ingredients until smooth. Spread over base and return to the freezer for 6 hours.

 

For the caramel, blitz all ingredients until smooth and spread over the slice. Drizzle with chocolate. Store in the freezer.
