Snickerdoodle Scones

Pumpkin season is upon us!! What better way to celebrate pumpkins but in the form of Pumpkin Spice Snickerdoodle Scones?! You'll need Macro Mike Snickerdoodle Cinnamon Cookie Protein Powder, pumpkin spice blend, maple syrup and a few more pantry goodies. Its an easy vegan recipe for any time of year!


ingredients

SCONES:

  • 1cup / Oat flour
  • 2 scoops / Macro Mike Snickerdoodle Protein Powder
  • 1/2cup / Almond flour
  • 2tsp / Pumpkin spice
  • 2tbsp / Applesauce
  • 1/4cup / Vegan butter, chilled
  • 1/3cup + 2 tbsp / Maple syrup
  • 1tsp / Baking powder + vanilla
  • 1/4tsp / Sea salt

COATING:

  • 1/4cup / Monk fruit sweetener (or coconut sugar)
  • 1tsp cinnamon

DRIZZLE:

  • 1/3cup / Monk fruit sweetener, powdered
  • 1-2tbsp / Plant milk, as needed
  • 1/4tsp / Pumpkin spice

steps

Preheat oven to 180 degrees Celsius.
 
Combine all ingredients for the scones, besides the butter, in a food processor until well mixed.
 
Then pulse in the cubed butter until your dough forms.
 
Place the dough on parchment paper and form into a circle, about 1-2 inches thick.
 
Cut into 6 triangles.
 
In a bowl combine the coating ingredients.
 
Dip each triangle into the sugar coating & place on a lined baking tray.
 
Bake for 10-12 minutes or until done.
 
Remove and let cool.
 
Combine drizzle ingredients.
 
Drizzle!
