Coconut Ice Bars

Pretty in pink! These Strawberry Protein Coconut Ice bars are made with our Macro Mike Strawberry Cheezecake Almond Premium Protein which is the first almond protein made in Australia EVER!! Its smooth and perfect for this vegan recipe which calls for dessicated coconut, rice bubbles, pink pataya powder, honey, and coconut milk. Try using blue spirulina to make it blue rather than pink!



Place 2 cups of coconut, 2 cups of puffed rice and half the quantity of oil in a food processor and blitz until very fine.
Add vanilla extract, half the quantity of honey and half the quantity of coconut milk, and blitz until well combined.
Line a 20cm square cake tine with baking paper.
Press the coconut mixture evenly into the base of the cake tin, and refrigerate.
Prepare the second half of the ingredients as above, but adding protein powder and the pink pataya powder with the honey and coconut milk so that this batch is pink.
Take the cake tin with the white layer, press the second pink layer on top and refrigerate for 1-2 hours.
Slice, and enjoy!
