Strawberry Cheezecake
Protein Ice Cream

Dairy free ice cream is the dream! Loaded with our Premium Plant Protein in the Strawberry Cheezecake flavour, these Strawberry Cheezecake Protein Ice Cream Cones will take you back to summer. Totally gluten free and vegan, our premium makes the perfect family snack!


ingredients

  • 1 x 400ml can / Coconut cream, refrigerated overnight
  • 1/4cup / Maple syrup
  • 1/4cup / Cashew butter
  • 1 scoop / Macro Mike Premium Strawberry Cheezecake Protein
  • 3cups / Strawberries, chopped
  • 1tsp / Vanilla essence⠀
  • 3/4cup / Shortbread biscuits, gluten free, roughly chopped⠀

SAUCE

  • 1cup / Strawberries⠀
  • 1/2tbsp / Lemon juice⠀
  • 1tbsp / Granulated sweetener
  • 1/2tsp / Vanilla

steps

For the strawberry sauce add the strawberries, maple syrup, vanilla and lemon juice to a small saucepan and cook for approximately 10 - 15 minutes on a medium heat until the sauce thickens.
 
Puree the sauce and allow to cool while you make the ice cream. ⠀ ⠀
 
Add all the ice cream ingredients (except for biscuits) to a food processor and process until smooth, transfer to a loaf tin and gently fold through shortbread biscuits.
 
Dollop and swirl through your strawberry sauce on top along with extra crushed biscuits and place in the freezer to set for 6 hours.
 
When ready to eat, allow to thaw for 10 minutes before serving.
