There's a huge trend moving towards using sweet potatoes and yams in sweet dessert dishes, so why not use this versatile nutritious ingredient to make delicious vegan protein muffins? In addition some Macro Mike Hawaiian Salted Vanilla Protein Powder and sweet potatoes, you'll need dates, almond meal, flax eggs and a few more pantry essentials.



Preheat the oven to 180° Celsius.
Drain the dates of water and place all ingredients in a food processor blending until combined to a smooth texture.
Evenly divide the mix between 12 muffin tins.
Bake for 15-20 minutes until a toothpick comes out clean.
Delicious as a snack on their own but next level with a dollop of nut butter on top.
