ingredients

*MAKES 12 MUFFINS

DRY:

  • 1/2 cup of Wholemeal or GF AP flour 80g
  • 1/2 cup of oat flour 60g
  • 1/3 cup vanilla salt protein
  • 35g coconut sugar
  • 2tsp baking powder
  • 1/4 tsp baking soda

WET:

  • 2 small -medium ripe bananas 190-200g
  • 1/4 C (60g) coconut yoghurt
  • 1/4 C coconut oil
  • 1/2 C plant based milk
  • 1 Tsp vanilla

Crumb topping:

  • 25g rolled oats
  • 2tbs flour
  • 10g natvia/ or coconut sugar
  • 30g apple sauce mix

Cream icing:

  • 80g of light cream cheese/vegan cream cheese
  • 30g coconut yoghurt
  • 10g of vanilla protein
  • 1/2tsp vanilla
  • 10g natvia /coconut sugar

 

steps

1. Preheat the oven to 180•c.
 
2. Mix both dry and wet ingredients in seperate bowls first. Once both are well mixed combine the wet and dry mixes and mix well.
 
3. Spray a 12 muffin tin. Add muffin mix.
[if adding crumb topping, place it on top of each muffin before baking.]
 
4. Bake for 20-25 minutes.
 
CRUMB TOPPING
Mix all ingredients together and trickle over the top of each muffin. [alternatively a few tbs granola with apple sauce]
 
CREAM ICING
Allow muffins to cool.
Mix all ingredients together & spread on top of each muffin
