ingredients

DRY:

  • 1/2cup (80g) / Wholemeal or GF AP flour
  • 1/2cup (60g) / Oat flour
  • 1/3cup / Macro Mike Salted Vanilla Protein+ Powder
  • 35g / Coconut sugar
  • 2tsp / Baking powder
  • 1/4tsp / Baking soda

WET:

  • 2 (190-200g) / Ripe bananas
  • 1/4cup (60g) / Coconut yoghurt
  • 1/4cup / Coconut oil
  • 1/2cup / Plant based milk
  • 1tsp / Vanilla

CRUMB TOPPING:

  • 25g / Rolled oats
  • 2tbs / Wholemeal flour
  • 10g / Natvia or coconut sugar
  • 30g / Apple sauce mix

CREAM ICING:

  • 80g / Light cream cheese or vegan cream cheese
  • 30g / Coconut yoghurt
  • 10g / Macro Mike Salted Vanilla Protein+ Powder
  • 1/2tsp / Vanilla essence
  • 10g / Natvia or coconut sugar

steps

Preheat the oven to 180 degrees Celsius.
 
Mix both dry and wet ingredients in separate bowls first. Once both are well mixed combine the wet and dry mixes and mix well.
 
Grease a 12-muffin tin. Divide the mixture into all 12 cups. If adding crumb topping, place it on top of each muffin before baking.
 
Bake for 20-25 minutes.
 
CRUMB TOPPING
Mix all ingredients together and trickle over the top of each muffin, or a few tbs granola with apple sauce.
 
CREAM ICING
Allow muffins to cool. Mix all ingredients together then spread on top of each muffin.
