Vegan protein banana bread

ingredients

  • 3 / Medium ripe bananas
  • 1/2cup / Maple syrup
  • 1/4cup / Plant mylk (soy is best)
  • 1/4cup / Macro Mike Sweet Original PB+ Peanut Butter
  • 2 / Flax eggs
  • 1cup / Wholemeal spelt flour
  • 2 scoops / Macro Mike Snickerdoodle Protein+ Powder
  • 1/2cup / Almond meal
  • 1.5tsp / Baking powder
  • 1cup / Diced strawberries

Preheat oven to 180 degrees Celcius (fan forced).

To make the flax ‘eggs’: Combine 2tbsp flax meal with 6tbsp water and set aside for 2 minutes (this is for 2 eggs).

Use a hand mixer to combine the bananas, maple syrup, mylk, peanut butter and the flax eggs.

Add the flour, protein powder, almond meal and baking powder and combine well.

Gently stir in the diced strawberries.

Spray and line a baking tin, pour batter into the tin and bake for 35-40 minutes. The banana bread should be slightly brown on top. Use a toothpick or equivalent to check that it is cooked through.

Allow to sit on the bench for 10 minutes before removing from tin. Slice and enjoy!
