ALMOND COCONUT PROTEIN JOY BARS

Ingredients

Base:
¼cupMacro Mike Salted Caramel Premium Protein Powder
¼cupCoconut flour
½cup Almond meal
½tsp Almond extract
3tbspMaple syrup
2tbsp Macro Mike Sweet Original Almond Butter, made smooth
COCONUT LAYER:
1cupCoconut, shredded
¼cupCoconut cream
½tspVanilla
¼cupMaple syrup
CHOCOLATE LAYER:
1 ½cupDark chocolate
¼cupCoconut cream
1tbsp Macro Mike Sweet Original Almond Butter, made smooth

Steps

  1. Combine all base ingredients in a bowl until completely smooth and a dough has formed.
  2. Press into the bottom of a lined loaf pan.
  3. To make the coconut layer, combine everything in a bowl and mix until smooth and fully combined.
  4. Spread over the base layer.
  5. Combine all the chocolate layer ingredients in a microwave safe bowl.
  6. Heat in 20 second increments, stirring well between each one, until smooth and thick.
  7. Pour evenly over the coconut layer.
  8. Place in the freezer until set.
