Steps

Preheat oven to 180°C and lightly spray a loaf tin.

Combine cookie mix and soy milk in a bowl until it forms a dough. Press 3/4 of it into the base of the loaf pan and bake for 15 mins .

Combine soy yogurt, protein powder, cornflour and extracts in a separate bowl, then spread over the cookie base.

Use a spoon or spatula to place chunks of the remaining cookie dough on top of the cheesecake layer, followed by choc chips and melted Biscoff - Bake for 25 mins, remove and transfer to fridge to cool before slicing into 6 bars. Enjoy!
