Steps
  1. Mix the chia seeds and coconut water together and leave to sit for an hour.
  2. Heat 1 tbsp of maple syrup in a pan until its starts to bubble (careful not to burn it), add the banana and cook for 4-5 minutes.
  3. Mix the coconut yoghurt and protein powder together until well combined.
  4. Dividing between 2 glasses, add the banana to the bottom of each glass. Add a layer of yoghurt, then a layer of chia seeds and repeat so there is 2 layers of each.
  5. Top with the remaining tablespoon of maple syrup between the 2 serves and sprinkle with peanuts.
