Steps
  1. Soak medjool dates in hot water for 10 minutes. 
  2. In a food processor, combine buckwheat, mixed nuts and protein powder.
  3. Blend until mixture turns almost into a flour. 
  4. Add in dates and nut butter. Blend again until a thick dough forms. 
  5. Add in seeds and dried fruit and pulse until just combined. 
  6. Spread mixture out into a lined baking tray. Add in whole apricots, pushing them into the top of the mixture.
  7. Place into fridge to set for a few hours.
  8. Slice and enjoy!
