| 1 cup | Buckwheat Flakes |
| 1/2 cup | Macro Mike Vanilla Buttercream Almond Protein |
| 1 cup | Mixed Nuts |
| 1 tbsp | Nut Butter |
| 1 cup | Soaked Medjool Dates |
| 1/2 cup | Dried Fruit |
| 1/4 cup | Seed Mix |
| Whole Dried Apricots | |

Soak medjool dates in hot water for 10 minutes.

In a food processor, combine buckwheat, mixed nuts and protein powder.
- Blend until mixture turns almost into a flour.
- Add in dates and nut butter. Blend again until a thick dough forms.
- Add in seeds and dried fruit and pulse until just combined.
- Spread mixture out into a lined baking tray. Add in whole apricots, pushing them into the top of the mixture.
- Place into fridge to set for a few hours.
- Slice and enjoy!
