Great recipe for Valentine's Day or any time, because who doesn't need a little lovin? Make something sweet with your vegan sweetheart with Macro Mike Protein Powder and PB Powdered Peanut Butter. A yummy brownie layer made with dates, maple syrup, and nuts, covered by by a creamy pink raspberry layer. Perfect raw treat for summer, totally no bake!


ingredients

BROWNIE LAYER:

PB CHEEZECAKE LAYER:

  • 30g / Macro Mike PB Cheezecake PB+
  • 1 1/2cup / Cashews (soak overnight)
  • 2tbsp / Coconut butter
  • 1tbsp / Coconut oil
  • 2tbsp / Maple syrup, sugar free
  • 1/2tsp / Vanilla bean paste

RASPBERRY CREAM LAYER:

  • 2/3cup / Cashews (soak overnight)
  • 100ml / Coconut cream
  • 2tbsp / Coconut oil, melted
  • 2tbsp / Maple syrup, sugar free
  • 1cup / Raspberries, frozen
  • 2tbsp / Water, if needed

BROWNIE LAYER
 
Line a baking dish 17x17cm with baking paper.
 
Place nuts in food processor and pulse until they are finely chopped.
 
Add dates and pulse until combined.
 
Pour in maple syrup, carob powder and pulse again.
 
Add water if needed until mixture comes together.
 
Spread mixture into baking dish pressing down with a spatula.
 
Place in freezer to harden whilst making cheesecake layer.
 
PB CHEEZECAKE LAYER
 
Place soaked and drained cashews (soaked at least overnight) in processor with maple syrup and pulse until a paste like consistency is formed.
 
Add all over ingredients and blend until smooth.
 
Add water if needed.
 
Pour on top of brownie layer and freeze for 15 minutes.
 
RASPBERRY CREAM LAYER
 
Place cashews, maple syrup and coconut oil in blender and blend until smooth.
 
Add coconut cream and raspberries and blend until smooth.
 
Pour the cream over cheesecake layer and freeze for at least 90 minutes.
 
Once firm remove from the dish and cut into 10 bars.
 
Keep in an airtight container in freezer for up to 6 weeks.
 
Defrost for approximately 10 minutes before serving.
