Ingredients
50gLight Butter. melted and cooled slightly
1Egg (or vegan sub)
70gYoghurt
¾ CupMilk + 1 Tsp vinegar or lemon juice to make buttermilk
1 TspVanilla Essence
100gGranulated Sweetener
140gFlour
60gMacro Mike Vanilla Buttercream Almond Protein
150-200gChopped Strawberries
70gWhite Chocolate Chips (reserve some for top)
1 ½ TspBaking Powder
¼ TspBaking Soda
 Dash of Salt

The perfect healthier bakery style muffins! If you're looking for a healthy snack to prep then you need to give these a try!

Steps

  1. Mix the melted light butter and sweetener until well combined. Add in the egg, yogurt, milk and vanilla and mix.

  2. Sift through the dry ingredients and mix until just combined. Fold in the chopped strawberries and white chocolate chips.

  3. Cover and let it sit in the fridge for about 30mins - overnight (can skip).

  4. Pre-heat oven to 220c.

  5. Divide into 8-10 muffin liners, top with extra strawbs and choc chips and bake at 220c for 5 mins, drop the temperature to 180c and contintue to bake for 18-20 minutes.

  6. Let cool in the tin and enjoy!
